Roasted Red Pepper Soup
Ingredients:
•1 tbsp olive oil
•1 large onion, chopped
•2 carrots, chopped
•3 stalks of Celery, chopped
•1 tsp salt
•1½ tsp cracked black pepper
•2 cloves of garlic, chopped
•2 tbsp fresh torn basil; more for garnish
•1 tbsp fresh thyme
•4 red bell peppers
•Large can of crush tomatoes
•4 cups of vegetable broth
•¼ cup or Greek yogurt; or sour cream
