Santiago Lastra is the Mexican chef and co-owner of the Michelin-starred restaurant KOL and KOL Mezcaleria in London. He entered the restaurant world at the age of fifteen and soon left Mexico to travel the world and learn from other chefs. We will hear about the defining moment in Santiago Lastra’s career when he got involved in the Noma Mexico pop-up in 2017, when he reconnected with his roots which inspired him to open his first restaurant. We will also hear about the essence of Mexican food and its role in the Mexican culture. At the end Lastra will reveal his favourite restaurants in Mexico City, Tulum, Oaxaca, London and in the rest of the world.
