Alexandra speaks to Asma Khan. Asma is an Indian-born chef and restaurateur who owns the amazing Darjeeling Express in Soho, one of London’s most loved restaurants. Darjeeling Express started as a dinner for 12 guests at home, serving Indian food lovingly cooked from family recipes that go back to generations. The food is a true homage to Asma’s royal Mughlai ancestry and the busy streets of Calcutta, where she grew up. What results is a lovely mélange of street food like papri chaat and royal recipes like lamb dum biryani, that take you on a journey from Calcutta in the east of India to Hyderabad in the south.
An all-women team of housewives runs the kitchen at Darjeeling Express, and have been doing so from day one. Asma was the first, and so far only British chef to appear on Netflix’s Chef’s Table, and last year was named Number 1 on Business Insider’s 100 Coolest People in Food & Drink. It is fitting that this episode follows International Women’s Day as Asma is known for not just her words but her actions on the issue of heightened masculinity within the hospitality industry. Rightly angered by the patriarchal system that is not set up to encourage women to pursue a career in catering, Asma is constantly pushing boundaries and breaking down barriers for women in professional kitchens worldwide.

Born into a family of food lovers in Dundee, Scotland, Jeremy moved to London in the 80’s during an exciting period for British cuisine, cooking with the likes of Simon Hopkinson and Alistair Little. A year spent in Italy and France inspired her to enroll at catering college. Alexandra speaks with Sarit Packer and Itamar Srulovich of Honey & Co. Sarit and Itamar met as chefs in Tel Aviv 16 years ago. They moved to England together and opened Honey & Co, a tiny restaurant in Fitzrovia serving traditional Middle Eastern food. Honey & Co is rapidly turning into an empire: the original site has since been joined by two more, Honey & Spice and Honey & Smoke.

Ben is the Culinary director of the Stafford London in St James's. he oversees the food offering throughout the hotel including the Game Bird restaurant , the American bar and private dining. In September Ben opened “Norma” a Sicilain-Moorish influenced restaurant on Londons Charlotte street in a beautiful five storey Georgian townhouse. The restaurant, which Ben is opening with the Stafford features a bespoke raw bar serving Sicilian style crudos, a first floor bar serving seasonal, understated cocktails and a selection of Marsala served by the glass.

Alexandra speaks to Mira Manek. Mira combines her love of healthy eating and Indian flavours to create her own style of vibrant Indian-inspired food. Her first cookbook Saffron Soul, was published in 2017, a collection of modern and traditional vegetarian recipes rooted in her Gujarati heritage interspersed with family stories. Her second book Prajna, Ayurvedic Rituals for Happiness was released earlier this month.
Last year, Mira launched Chai by Mira, cafe, chai lounge and event space at Triyoga Soho, inside Kingly Court, Carnaby. Her chai spice mix is used by various cafes and restaurants in London and Mira has also collaborated with restaurants like Holborn Dining Rooms on their menu. She holds supperclubs, workshops and retreats in London and globally.

Alexandra speaks with Romy Gill! Chef Romy Hardeep Gill MBE is a British/Indian chef, food and travel writer, based in South Gloucestershire. She is one of the few female Indian chefs on the UK restaurant scene, and was appointed an MBE in the Queen’s 90th birthday honours list in 2016. Alexandra speaks to Robin Hutson. Robin is a British hotelier, listed by The Caterer as the UK's second most powerful. Hutson started his career with Claridge's, as a waiter. He then moved to the Hôtel de Crillon in Paris, and was appointed general manager of Chewton Glen at 28 years old.
In 1994, Hutson co-founded the Hotel du Vin chain with Gerard Basset. In 2004, they sold the company for £66 million, and Robin has since started The Pig venture. His new book The Pig: Tales and Recipes from the Kitchen Garden and Beyond is out now
